Spinach Ginger Soup

Time of Preparation:  20 minutes

Ingredients:

  1. Spinach 100 gram
  2. Ginger 1 inch
  3. Garlic cloves 2
  4. Onion 50 g
  5. Salt as per taste
  6. Pepper powder as per taste
  7. Oil 5 g

Method:

  1. Heat the oil in a large saucepan. Add the onions, stir and put on the lid. Sweat for 10 minutes, stirring a couple of times.
  2. Pour in the stock and cook for 10 – 15 minutes until it’s soft.
  3. Add the spinach and cook for a couple of minutes until wilted. Use a hand blender to blitz to a smooth soup.
  4. Reheat and serve.
