Ingredients for Making Christmas Cake:
Mixed fruit, 200g
Chopped dates, 100g
Walnut pieces, 150g
Juice of an orange
Banana (Ripe), 1
Coconut flour, 80g
Almond flour, 2 tablespoon
Mixed spice, 2½ tsp
Cloves, ¼ tsp
Baking soda, 1tsp
Vanilla extract, 1tsp
Salt, 1 pinch
Method of making a healthy and yummy Christmas cake:
Begin by preheating your oven to gas mark 4. Grease a cake tin and place it to the side.
In a pan place your mixed fruit, dates, walnut pieces and the juice of an orange and bring to the boil. Once boiled, remove from heat, cover, and place to the side.
In a bowl blend banana. Add the dry ingredients (except the baking soda) to this mix and then add the eggs one by one.
Once done, add the baking soda to the fruit mix and then add the fruit mix to the banana mix. Stir the mixture together until everything is combined and then spoon into your baking tray and even out.
Bake the Christmas cake for 50 minutes. You know your cake will be done if you can insert a knife into the middle and it comes out clean. If not, cook for a few more minutes. Once cooked, remove from the oven and leave on the side to cool and serve.
