How about Mustard oil n ghee?

    Ideally one should not eat too many fried foods as they play havoc with the digestion and liver. Mustard oil is used in certain dishes like fish, brinjals, bitter gourd (Karela).

Ideally, one should avoid deep frying for health reasons and choose shallow frying or air frying.

However, if you wish to use oil for deep frying then oils which do not spoil on frying (which means have a high smoking point) should be used like peanut oil, safflower oil or sunflower oil.
