Roasted Chickpea And Avocado Salad

Ingredients:

  1. Cucumber, 1 large

  2. Tomatoes, 3 medium

  3. Mixed Greens, 150 gm

  4. Avocado, 1 (Diced)

  5. Chickpea, 500gms

  6. Smoked paprika, 2 tsp

  7. Olive Oil, 2 tablespoon

  8. Fresh Lemon Juice, 2 tablespoon

  9. Salt, ½ tsp

  10. Black pepper powder, ½ tsp

  11. Garlic Salt, 1½ tsp

Method:

  1. Preheat oven to 400°F (200°C).

  2. In a large bowl, mix together the chickpeas, olive oil, paprika, and garlic salt.

  3. Spread the chickpeas onto a baking sheet in one layer. Bake for 25-30 minutes, until the chickpeas are crisp.

  4. Dice the cucumber and add to a large bowl.

  5. Toss in the mixed greens, cucumber, tomatoes, avocado, roasted chickpeas, olive oil, lemon juice, salt, and pepper, and mix until well combined.

  6. Divide between individual bowls and serve.
