Salmon Asparagus Frittata

Ingredients:

  1. Salmon 100 g
  2. Egg White 1
  3. Asparagus 50 g
  4. Skimmed Milk 10 ml
  5. Feta Cheese 10 g
  6. Olive Oil 5 g
  7. Salt Pepper to taste

 

Method:

  1. Gather all the ingredients.
  2. In a medium bowl, beat eggs, milk, salt and pepper until well blended.
  3. In a nonstick skillet, heat oil over medium heat. Add asparagus; cook 3 to 5 minutes, stirring frequently, until crisp-tender.
  4. Reduce heat to medium-low. Add egg mixture to skillet and then gently stir in salmon. Cover; cook for 6 to 8 minutes or until the egg is set. (Do not stir.) Sprinkle with cheese; cover and cook for 1 to 2 minutes or until the cheese is melted.
  5. Serve hot.
