Salmon Asparagus Frittata

Ingredients:
- Salmon 100 g
- Egg White 1
- Asparagus 50 g
- Skimmed Milk 10 ml
- Feta Cheese 10 g
- Olive Oil 5 g
- Salt Pepper to taste
Method:
- Gather all the ingredients.
- In a medium bowl, beat eggs, milk, salt and pepper until well blended.
- In a nonstick skillet, heat oil over medium heat. Add asparagus; cook 3 to 5 minutes, stirring frequently, until crisp-tender.
- Reduce heat to medium-low. Add egg mixture to skillet and then gently stir in salmon. Cover; cook for 6 to 8 minutes or until the egg is set. (Do not stir.) Sprinkle with cheese; cover and cook for 1 to 2 minutes or until the cheese is melted.
- Serve hot.
