Saucy Tomato Subzi

Ingredients for Saucy Tomato Subzi

  • 500 gm med. ripe tomatoes
  • 2 green chillies slit
  • 1 stalk curry leaves
  • 1 tbsp. coriander chopped fine
  • ½ Tsp sugar
  • ½ Tsp red chilli powder
  • ¼ Tsp turmeric powder
  • ¼ Tsp garam masala
  • ½ Tsp cumin seeds powder
  • ½ Tsp dhaniya powder
  • 3-4 pinches asafetida
  • salt to taste
  • ¼ tsp each cumin & mustard seeds
  • 1 tbsp olive oil

Method

  1. Chop tomatoes into eight pieces each and remove their seeds.
  2. Destalk curry leaves. Heat oil in a non-stick pan.
  3. Add seeds, allow to splutter.
  4. Add asafoetida, curry leaves, green chillies.
  5. Stir and add tomatoes.
  6. Add all dry masalas and salt over them.
  7. Stir gently, cover and cook for 3-4 minutes.
  8. Sprinkle sugar, stir and simmer 2 minutes.
  9. Garnish with coriander before serving.
  10. Serve hot with phulkas or rotis.
