Veggie Pita Pocket

Ingredients for Veggie Pita Pocket

  • 1 Pita Bread
  • 1 cup hummus (Method given below)
  • 6-8 slices of peeled cucumber
  • 4-6 slices of tomato
  • 1 lettuce leaf (spinach would be great too!)
  • 1/4 cup feta cheese


For Hummus

Boil 1 cup chickpeas, add them into the blender along with 4-5 garlic cloves, roasted sesame seeds, 1 tsp lemon juice, 1 tsp cumin powder, 1 tsp olive oil, salt and black pepper.

Main Recipe

  1. Chop lettuce into bite size pieces.
  2. Slice pita in half and gently open to create a pocket.
  3. Spread hummus over inside of pita halves.
  4. Fill with cucumber, tomato, cheese, and lettuce to taste.
