Vegetable Quinoa

Ingredients:
- Quinoa 30 g
- Chana dal
- Mustard seeds 1/2 teaspoon
- Asafoetida 1 pinch
- Olive oil 1 tablespoon
- Roasted peanuts 1/4 cup
- Sesame seed 1/2 tablespoon
- Capsicum 1/4 cup
- Beans 1/4 cup
- Green chilli 2
Method:
- Wash quinoa quickly in running water and heat the oil in a pan and add mustard seeds. When mustard seeds crack add green chilli, sesame seeds, chana dal, hing, capsicum, beans and capsicum together and saute them till it becomes slightly burnt.
- Add 1 cup of water, quinoa, salt, turmeric in the pressure cooker and cook till 2-3 whistles.
- After cooking, mix quinoa and sauteed vegetables together, garnish with roughly chopped peanut sesame seeds with some green coriander leaf.
