Vegetable Quinoa

Ingredients:

  1. Quinoa 30 g
  2. Chana dal 
  3. Mustard seeds 1/2 teaspoon
  4. Asafoetida 1 pinch
  5. Olive oil 1 tablespoon
  6. Roasted peanuts 1/4 cup
  7. Sesame seed 1/2 tablespoon
  8. Capsicum 1/4 cup
  9. Beans 1/4 cup
  10. Green chilli 2

Method:

  1. Wash quinoa quickly in running water and heat the oil in a pan and add mustard seeds. When mustard seeds crack add green chilli, sesame seeds, chana dal, hing, capsicum, beans and capsicum together and saute them till it becomes slightly burnt.
  2. Add 1 cup of water, quinoa, salt, turmeric in the pressure cooker and cook till 2-3 whistles.
  3. After cooking, mix quinoa and sauteed vegetables together, garnish with roughly chopped peanut sesame seeds with some green coriander leaf.
